Fried Egg Tortilla Sandwiches - Version: 3.0, 6 SEP 2005

Fried Egg Tortilla Sandwiches

 

Ingredients

- Small corn or flour tortillas, two per sandwich

- Eggs, one per sandwich

- Olive or canola oil, or melted butter

- Spices, etc.: pepper, basil, dill, chives, onions, etc.

- Salt, cheese, salsa: optional (Try celery or popcorn salt!)

 

Equipment

- Spatula

- Small frying pan & cover

(Bottom of frying pan should be slightly narrower

than the diameter of the tortillas,

otherwise the eggs won't stay put!)

 

Procedure

1. Pour oil or melt butter in pan.

2. Lay one tortilla in pan.

3. Sprinkle on spices, etc. to taste.

4. Empty contents of one egg onto spices, etc.

Note: The order of 3-4 helps egg stay put with onions, etc.

5. Lay second tortilla on top of all that.

6. Cover. (Helps egg, etc. cook better.)

7. Fry-flip-fry until browned enough to be crispy.

8. Sprinkle/spread on salt, cheese, salsa. (Optional.)
